Fish Cake

Fish cakes are a puffy fried dough ball, made of a highly seasoned dough into which shredded saltfish has been mixed and of course bought from street vendors.  Fish Cakes are served w/spicy lime mayo dipping sauce.

History of Trinidad and Tobago

Trinidad and Tobago is a twin island country situated off the northern edge of South America mainland.   Bordering the Caribbean to the north, it shares maritime boundaries with other nations including Barbados to the northeast, Grenada to the northwest, Guyana to the southeast, and Venezuela to the south and west.   Trinidad and Tobago was “discovered” in 1498, when the Italian explorer Christopher Columbus landed on our shores. In reality, we were already “found” and occupied by the indigenous Amerindian tribes of the Arawaks and Caribs.  Trinidad remained in Spanish possession, despite raids by other European nations, until it was ceded to Britain in 1802. Tobago passed between Britain and France several times, but it was ultimately given to Britain in 1814.  Trinidad and Tobago achieved independence from England in 1962 and became the Republic of Trinidad and Tobago in 1976.

Our Name

Island Tingz got it’s name as a no brainer.  We knew that our food would be centered around our culture from Trinidad and Tobago and the culture of neighboring Caribbean islands.  And Tingz is just slang for things.

Bake and Shark

Bake and Shark is a very popular dish native to the twin islands of Trinidad and Tobago.  It is usually sold on the streets or one can take a trip to Maracas Beach and there are lines of stalls selling this incredible dish.  A visitor or even a native to the isle cannot take a trip to the beach and not enjoy a delicious Bake and Shark.  It has even been enjoyed by several celebrity chefs that visited the islands.  The “bake” is made from a flour based dough that is fried until it puffs up.  Shark is Shark.  Simply put it’s breaded shark meat that is fillet, green seasoned and fried.  The most important addition to bake and shark will be the condiments.  They will include but not be limited to cabbage slaw, mango chutney, tamarind sauce and a cilantro lime aioli.  With these condiments your taste buds can go from sweet to spicy in just a bite.


Pholourie dough is made up of flour, ground chickpeas, water and spices. Depending on the recipe, garlic, chili, onions and/or cumin are used. Then Shape the dough into balls and fried afterwards. The fried balls are usually served with a chutney to dip them in, usually tamarind or mango.
